THE VINIFICATION PROCESS<\/h2>\n

After being sorted, the berries are poured into thermoregulated concrete vats. No sulphite has been added to our wine since 2019. Alcoholic fermentation will occur in the vats for 20 to 29 days, at 27-28\u00a0\u00b0C. Next, following the malolactic fermentation, the free-run wine is transferred to barrels, where it is matured for 12\u00a0months, during which time regular tastings ensure optimal monitoring.<\/p>\n

The French oak barrels are renewed up to 40% every year.<\/p>\n

Rigorous quality control is carried out on each barrel every month, notably via microbiological analyses by the \u0152noteam laboratory.<\/p>\n

\nVinification in ceramic amphorae, a neutral material, allows for gentle micro-oxygenation of the wine, which tempers the tannins brought by the barrel.

An illustrious representative of the Saint-\u00c9milion appellation, our Grand Cru enjoys a dominance of merlot. It features a deep garnet colour, blissfully flavoured dark berries and silky tannins.<\/p>\n
